Whole Fried Wild Turkey, Cajun Style

Ingredients:

1 (15-20 lb) wild turkey
5 gallons peanut oil
Salt, pepper, and red pepper to taste
3 Tbsp Bailey Farms Hot Sauce (your choice of flavor)
1 (16-oz) bottle Italian dressing
5 Tbsp Worcestershire sauce

Instructions:

Sprinkle turkey liberally with salt, pepper, and red pepper, inside and out. Place in heavy-duty foil. Mix together hot sauce, Italian dressing, and Worcestershire sauce. With a large syringe, inject mixture into turkey, just under the skin. Carefully pat into place. Wrap turkey in foil and place in refrigerator several hours to marinate. Remove 30 minutes prior to cooking.

On a large outdoor burner, place a large pot with basket. Heat oil very hot (350°) and lower turkey into hot oil. Cook 3 minutes per pound. The turkey will be blackened and crispy on the outside and juicy and moist on the inside.

Note: Domestically raised turkey may be used as alternate meat choice.
