White Bean Chicken Chili

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

2 Tbsp vegetable oil
1 lb diced, cooked chicken meat
1 onion, chopped
2 cloves garlic, minced
1 (14.5 oz) can chicken broth
6 tomatillos, husks removed, chopped
1 (16 oz) can diced tomatoes
1 (7 oz) can diced green chiles
1/2 tsp dried oregano
1/2 tsp ground coriander seed
1/4 tsp ground cumin
1 (15 oz) can white beans
2 ears fresh corn
salt to taste
ground black pepper to taste
1 lime, sliced

Instructions:

Heat oil and cook onion and garlic until soft. Stir in broth, tomatillos, tomatoes, chiles, and spices. Bring to a boil, then simmer for 10 minutes. Add corn, chicken, and beans. Simmer 5 minutes. Season with salt and pepper to taste.

Serve with the following topping options: cheese, limes, cilantro, avocado, sour cream, and tortilla chips.
