Vietnamese Chile Dipping Sauce

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

1 Tbsp. Thai chile, seeded & diced
6 Tbsp. fresh lime juice
1 tsp. sugar
1 clove garlic, minced
1 tsp. fish sauce
1 Tbsp. cucumber, finely diced
2 Tbsp. red onion, finely diced
2 Tbsp. fresh cilantro finely chopped

Instructions:

Place everything together in a bowl and toss. Its ready!

Yields4 servings.

This sauce will add zip to most any soup or salad.
