Vietnam Crab
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
4 cooked Dungeness crabs, cleaned
8 garlic cloves, pressed
3 tsp. coriander, freshly ground
3 tsp. white pepper, freshly ground
3 tsp. salt
2 tsp. Thai chile flakes
1/2 cup olive oil
Instructions:
1. Preheat the oven to 350F. Place all the ingredients except the crab in a bowl and whisk until well blended.
2. Place the crab pieces into a very large bowl and pour the mixture over the crab. Toss until evenly coated.
3. Put the crab pieces into large baking pans and place in an oven. Bake for 15 minutes. The garlic should start giving off a roasted aroma. Serve in the pans or a large bowl along with Jasmine rice and orange wedges.
