Vegetarian Green Chili
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
Ingredients:
2 tbs. olive oil
1 onion, diced
1 jalapeno pepper, seeded and diced
1 green pepper, cleaned and diced
1 Yukon gold potato, peeled and diced
2 garlic cloves, diced
Chili powder, to taste
Cumin, to taste
Oregano, to taste
Salt and pepper, to taste
4 cups low-sodium chicken or vegetable broth
1 can white hominy, drained and rinsed
1 bunch cilantro, roughly chopped
3/4 – 1 cup shredded cheddar cheese
Instructions:
Heat oil in large pot over medium-high heat. Add onion, peppers and potato, and cook until softened, about 5 minutes. Add garlic and cook additional minute. Stir in chili powder, cumin, oregano, salt and pepper.
Add broth and bring to a boil. Reduce heat to a simmer. Add in hominy, half the cilantro and simmer for 30 minutes. Serve in bowls, top with additional cilantro and shredded cheese, and enjoy!
