Vegan Tacos

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 tsp olive oil
1 onion
1 summer squash
1 jalapeno
1 tbsp taco seasoning
1 lime
1 can of black beans, rinsed & drained
10 small corn tortillas
Avocado, sliced
Lettuce
Tomato, diced
Olives

Instructions:

Yields: 10 tacos

Serve with a side of Spanish rice.

Cut onions into half moons and slice squash and jalapeno. Heat beans in a small pot or microwave. Heat oil in a pan over medium heat and add onions. Cook onions for 3 minutes and add squash and seasoning. Squeeze in juice from ½ of the lime. Stir gently and remove from heat once squash is tender.

Meanwhile, heat tortillas in a warm pan. Assemble tacos and slice remaining half of lime for garnish.
