Tomato Jam

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1.5 pounds Roma tomatoes, pitted and chopped
3/4 cup sugar
2 tablespoons lemon juice
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
1 jalapeno, seeded and minced
1 tablespoon finely chopped thyme

Instructions:

In a small pot, combine all ingredients, other than thyme, and bring to a simmer.

Simmer, stirring occasionally until the mixture becomes a consistency of a thick jam. This will take about an hour.

Stir in thyme and adjust for salt and pepper if necessary. Allow the jam to cool and refrigerate.
