Tomato-Jalapeno Enchilada Sauce

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

25 oz. tomato sauce, canned
1 sweet onion, sliced
1 clove garlic
3-6 jalapeƱo slices
3/4 tsp. chili powder
3/4 tsp. cumin
1/2 tsp. oregano
1/4 tsp. thyme
2 tbsp. fresh cilantro
2 tbsp. white wine vinegar
3/4 c. chicken stock
1/4 c. sour cream
Coarse salt and ground pepper
Pinch of sugar

Instructions:

Makes 2 1/2 cups.

Combine all ingredients in blender and puree until smooth. In a medium sauce pan, add tomato mixture and simmer, stirring until thickened, about 10 minutes. Pour over enchiladas.
