Tomato-Ginger Salsa
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
3 cups chopped and seeded Roma tomatoes
1 Thai chile pepper, sliced very thin
3/4 cup chopped red onion
2 Tbsp. fresh garlic chives
1/2 cup chopped fresh mint
1-1/2 Tbsp. minced and peeled fresh ginger
salt and pepper to taste
juice of 1/2 lime
Instructions:
Combine all the ingredients together in a medium bowl and season to taste with salt and pepper. This salsa can be made 1 day ahead of time. Cover the salsa and keep refrigerated until ready to use.
This salsa is excellent with seafood and grilled poultry. It also is a great accompaniment with eggrolls and rolled sushi.
