Tomatillo Sauce (Apple Juice Base)

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

14-15 tomatillos (soak in warm water and peel)
1/2 to 1 white onion, quartered
1/2 cup whole garlic cloves
8 cups apple juice
1/2 bunch cilantro
1 bunch green onions, stems only

Instructions:

Combine the first four ingredients with the apple juice in a saucepan and bring the ingredients to a boil. Cook for for 20 minutes, stirring occasionally, then remove the saucepan from the heat and allow the mixture to cool.

Blend the mix together until it is smooth, then allow it to cool in the refrigerator for 12 hours. (If you do not let it cool it will not color.) Return the sauce to the blender, and add the cilantro and green onion stems. Blend until a green color is reached. For a brighter color, add some spinach or other green vegetables.

Yields about 8 cups.
