Tomatillo Salsa
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!
Ingredients:
1 pound tomatillos, husked
1/4 cup cilantro leaves
2 Tbsp. fresh parsley, chopped
1 Tbsp. fresh lemon juice
1 clove garlic, diced
2 serrano peppers, diced
1/4 tsp. mustard seed
1/4 tsp ground black pepper
Instructions:
Bring 2 quarts of water to a boil in a large saucepan and add the tomatillos. Reduce the heat to low and simmer them for 10 minutes, then drain the tomatillos and place them with the remaining ingredients. Process the mixture in a blender or food processor, pulsing until coarsely blended. Place the salsa in glass jars and seal.
Yields about 3 cups.
