Tomatillo Salad Dressing

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

6 medium tomatillos, unhusked
1 bunch scallions, white only, chopped
1/3 cup cilantro, chopped
1″ piece of fresh ginger, chopped
1/2 tsp. honey
2 cloves garlic
1/4 cup olive oil
1 Tbsp. lime juice
salt and pepper to taste

Instructions:

Preheat the oven to 450F. Roast the tomatillos for 10-15 minutes unhusked. Once the tomatillos are done remove the husks and rinse. Blend all the ingredients except the tomatillos in a processor until smooth. Then add the tomatillos and blend until the mixture becomes a slightly chunky puree.

Serve chilled.
