Tomatillo Ranch Dressing

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

1 C Buttermilk
1 C Mayonnaise
1 C Cilantro, fresh
2 Tomatillos quartered
1 pkg Ranch dressing mix, (1 oz)
1 Jalapeño, seeded, diced
1 Tbs Lime juice
1 clove Garlic

Instructions:

Makes 1 quart; 10 minutes (2 hours resting)

In a blender place buttermilk, mayo, cilantro, tomatillo, ranch seasoning, jalapeño, lime juice and garlic. Blend until smooth. Pour into a jar, seal and refrigerate for at least 2 hours for the flavors to meld.
