Tomatillo Guacamole
The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!
Ingredients:
3 avocados, peeled, pitted, and mashed
3 tomatillos, husked and chopped
1 red onion
3 roma (plum) tomatoes, seeded and chopped
1 Tbsp lime juice
1 tsp red pepper flakes
3 drops Bailey Farms hot pepper sauce
Salt and pepper to taste
Instructions:
In a medium bowl, mix avocados, tomatillos, red onion, roma tomatoes, and lime juice. Season with red pepper flakes, hot pepper sauce, and salt and pepper. Cover and refrigerate at least 45 minutes before serving.
