Thai Peanut Sauce

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

3 cloves garlic, minced
1 shallot, minced (can substitute 1/2 small onion)
1″ piece ginger root, grated
4-6 Thai peppers,minced
1 cup water
1/4 cup soy sauce
2 Tbsp. cider vinegar
3/4 cup peanut butter (chunky or smooth)

Instructions:

In a saucepan add a little oil and saute the garlic, onion, ginger and peppers. When the onions are clear add the water, soy sauce, and vinegar. Heat until it just starts to simmer. Add the peanut butter and mix until blended. Simmer until the sauce thickens.

Serve by pouring over the meat and vegetables. Serve the sauce warm. This recipe is rich and spicy. It is excellent over sauteed chicken and broccoli.
