Thai-Dyed Seafood Soup

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

6 cups water
6 kaffir lime Leaves
2″ piece of ginger root, chopped
1 bunch scallions. chopped
1 medium lemon, thinly sliced
2 medium jalapeno, chopped
salt and pepper, to taste
1/2 pound salmon, cubed
1/4 cup basil, stripped
palm vinegar or white vinegar
red chile paste, to taste

Instructions:

Bring the water, lime leaves, ginger root, scallions, lemon and jalapenos to a boil. Reduce the heat to low and simmer for 8 minutes. Add the salt, pepper and salmon. Simmer until the salmon changes color, then ladle the salmon pieces into individual serving bowls. Garnish the bowls with some basil, vinegar and chile paste.
