Thai Cocktail
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1/2 cup chopped ginger
2 cups sugar
4 thin jalapeno slices
4 basil sprigs
4 ounces Gin
1 1/2 lime juice
1 ounce coconut cream
1 ounce ginger syrup (see below)
Instructions:
Serves 2
Ginger Syrup:
Add chopped ginger to 1/2 quart water and bring to a boil. Add 2 cups of sugar and bring back to a boil. Reduce hat and simmer for 30 minutes. Strain and refrigerate.
Cocktail:
Muddle 2 jalapeno slices and 2 basil sprigs in a mixing glass. Add remaining ingredients, fill with ice and shake. Strain into ice-filled glasses. Garnish with the remaining jalapeno slices and basil sprigs. Serve.
