Thai Chile Pork
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
2 Tbsp. peanut oil (can substitute vegetable oil)
1″ piece ginger root, peeled and grated
2-4 Thai chiles finely chopped
1-1/2 pounds pork tenderloin cut in strips
1 red bell pepper cut in strips
1 yellow bell pepper cut in strips
6 scallions, trimmed and sliced
1 Tbsp. tomato paste
1 Tbsp. water
2 tsp. soy sauce
1 tsp. honey
1 tsp. sesame oil
Instructions:
Heat the oil in a wok and stir-fry the ginger and chiles for 2 minutes over high heat. Add pork and stir-fry for 4-5 minutes. Add the peppers and cook for 2 minutes. Add the scallions and stir-fry for 30 seconds. Add the tomato paste blended with water, soy sauce and honey. Stir-fry for 1 minute. Add the sesame oil and stir-fry until all the ingredients are well blended. Serve immediately with rice.
Yields 4 servings.
