Thai Chicken and Basil

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

1/2 pound boneless chicken breast or scallops
2 Tbsp. oil
3 garlic cloves (chopped)
3 Kaffir lime leaves
1/2 cup straw mushrooms
1/4 cup shredded bamboo shoots
3 Tbsp. oyster sauce
3-6 Thai chiles
15 basil leaves
2 cups chopped cabbage

Instructions:

Chop the garlic and cut the lime leaves into strips. Chop the chiles and slice the chicken into 2″ strips.

Heat the oil and add the chopped garlic and lime leaves. Add the chicken, mushrooms, bamboo shoots, oyster sauce and chiles. Stir fry for 5 minutes or until the chicken is cooked. Mix in the basil leaves and serve on a bed of chopped cabbage.
