Texas Caviar

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 lb dry black-eyed peas
2 cups Italian salad dressing
2 cups diced green pepper
1 1/2 cups finely chopped green onion
1/2 cup chopped jalapeno peppers
1 (3-oz) jar diced pimento, drained
1 Tbsp finely minced garlic
Salt to taste
Bailey Farms Hot Pepper Sauce to taste

Instructions:

Soak black-eyed peas in enough water to cover for 6 hours or overnight. Drain well. Transfer peas to saucepan, add enough water to cover. Bring to a boil over high heat. Reduce heat, allow to boil until tender, about 45 minutes. Do not overcook. Drain well, transfer to a large bowl. Blend in Italian dressing, and let cool. Add remaining ingredients and mix well. Refrigerate. Serve with tortilla chips.

Note: this dish can also be served on a lettuce leaf as a salad. Serve with grilled chicken for a cool summer meal.

Makes 7 1/2 cups.
