Tex-Mex Caviar

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 (10 oz.) package frozen black-eyed peas
1/4 cup chopped sweet red pepper
1/4 cup chopped sweet green bell pepper
1/4 cup chopped red onion
1 Tbsp. chopped fresh jalapeno pepper
2 Tbsp. chopped cilantro
1 Tbsp. minced garlic
1/4 cup Fat-Free Italian dressing
salt and pepper, to taste

Instructions:

Allow the peas to thaw, then rinse and drain them. Combine with other ingredients and toss well.
