Teriyaki Shrimp Burgers with Grilled Pineapple Salsa, Bacon, and Blue Cheese

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 1/2 pounds shrimp, peeled, deveined and coarsely chopped
2 cloves garlic
1 1 inch piece ginger, grated
2 tablespoons pineapple teriyaki sauce (see below)
1 teaspoon sesame oil
2 green onions, thinly sliced
1/4 cup bread crumbs
1 cup grilled pineapple salsa or 4 slices pineapple, grilled
8 slices bacon, cooked
1/4 cup blue cheese, crumbled

For the Teriyaki Sauce:
1/4 cup soy sauce
1/4 cup mirin
1/4 cup pineapple juice
3 tablespoons brown sugar
1 teaspoon garlic, minced
1 teaspoon garlic, minced
1/2 pineapple, Peeled, cored and sliced 1/4 inch thick
1/2 red onion, diced
1 jalapeno chili pepper, finely diced
1 lime, juice and zest
1/4 cup cilantro, chopped
salt to taste

Instructions:

Servings: 4

Mince 1/3 of the shrimp in a food processor along with the garlic, ginger, teriyaki sauce, sesame oil and green onions.

Mix the minced shrimp into the chopped shrimp along with enough breadcrumbs that the mixture will hold together, form 4 patties and chill in the fridge for at least 30 minutes.

Oil your grill, heat to medium-high and cook until the shrimp turns pink, about 3-5 minutes per side. Assemble the burgers and enjoy!

Option: Use your favourite teriyaki sauce instead of making your own.

Pineapple Teriyaki Sauce:
Servings: makes 1/2 cup

Simmer everything over medium heat until reduced by half.

For the Grilled Pineapple Salsa

Servings: makes 4 servings
Heat your grill (pan) over medium-high heat. Lightly brush the pineapple slices with oil and grill for 2 minutes on each side. Dice the pineapple and mix all of the ingredients.
