Tea of Quince, Ginger, and Chile
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1/4 of a quince
1 small chile
1/4 inch piece of ginger
some honey to taste
Instructions:
Start by boiling water, chopping the quince and chile and slicing the ginger. Pour over the boiling water and let steep for some minutes. Be careful with the ginger, it might easily extinguish the quince. You should only taste a hint of the acidity. Stir in some honey to add a sweet note.
