Tangy Spaghetti Sauce for Canning

3 medium onions, chopped
2 cups mini sweet peppers, chopped
3/4 cup Hungarian Wax chile, chopped
1 (8 oz) can mushrooms, sliced, chopped, and drained
3 tsp minced garlic
16 cups tomatoes, peeled, cored, and chopped
3 (12 oz) cans tomato paste
3 Tbsp brown sugar
1 Tbsp dried oregano
4 tsp canning salt
2 tsp dried basil
1 tsp black pepper
1 tsp crushed red pepper flakes
2 Tbsp Italian seasoning
1/2 tsp cumin


Add all ingredients to stock pot and heat to boiling. Reduce heat and simmer, partially covered, for two hours, stirring occasionally.

After it has simmered, fill clean, sterilized jars to withing 1/2 inch of the top of the jar. Put on the cap, screw the band finger-tight. Process for 35 minutes (for quart-sized jars)in a water bath.

Alternately, you can freeze the sauce in quart-sized freezer bags.

Makes 7-8 quarts.
