Tangy Pork with Tomatillos

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

1-1/2 tsp. ground cumin
1 tsp. chili powder
1/2 tsp. salt
1/4 tsp. ground red pepper
1 pound pork tenderloin, cut into 1″ cubes
1 Tbsp. olive oil
1 cup chopped sweet onion
1 tsp. minced garlic
1/2 cup chopped fresh cilantro
2 cups chopped tomatillo
4 cups cooked rice
2 cups coarsely chopped tomatoes

Instructions:

Combine thecumin, chile powder, salt and red pepper in a medium bowl. Add the pork and toss well.

Heat 1-1/2 tsp. of oil in a large nonstick skillet coated with cooking spray and add the pork. Saute for 3 minutes. Remove the pork from the pan and keep warm.

Heat 1-1/2 tsp. of oil in a pan over medium-high heat. Add the onion and garlic and saute for 30 seconds. Add the tomatillos and saute for 1 minute. Add the pork, cover, and cook for 10 minutes or until the pork is done. Add the tomatoes and cilantro, cover, and cook for 1 minute.

Serve with rice.
