Tandoori Marinade

This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

Ingredients:

1 1/4 cups plain yogurt
2 serrano chiles
2 tsp grated green ginger
3 cloves garlic
1 1/2 tsp salt
1 tsp black cumin
1 1/2 tsp garam masala
2 ts[ vinegar
2 Tbsp cooking oil
1/2 tsp red food coloring
1/2 tsp yellow food coloring

Instructions:

Combine the yogurt, green chiles, ginger, and garlic in a blender until smooth. Empty into a bowl and add all the remaining ingredients. Beat the mixture until glossy.

Makes 1 1/4 cups.
