Szechuan Sauce

Ingredients:

4 Tbsp. sesame oil
2 garlic cloves, minced
1 large onion, very thinly sliced
1/2 tsp. fresh ginger root, minced
1 Tbsp. Bailey Farms Red Habanero Hot Sauce
1/3 cup chicken broth concentrate
4 cups water
3 Tbsp. soy sauce
2 Tbsp. tomato paste
2 Tbsp. Hoisin sauce
1 Tbsp. sugar
1 Tbsp. rice wine vinegar

Instructions:

Preheat the sesame oil in a small pot and stir-fry the garlic, onion, ginger and hot sauce for 2 minutes. Watch out for the fumes.

Stir in the chicken broth concentrate, water, soy sauce, tomato paste, Hoisin sauce, sugar and rice vinegar. Boil over high heat until the mixture reduces a little more than half. This sauce will keep sealed and refrigerated for a few weeks.
