Sweet Chile Pepper Jam

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients:

2 large red or green peppers
6 large red chiles
2 cloves
Pinch of nutmeg
18.8 oz sugar
2 Tbsp brown sugar
3 Tbsp rice vinegar
Juice and rind from 1 lemon
Pinch of salt

Instructions:

Chop the peppers and chiles into small pieces. Marinate the chiles and peppers with the rest of ingredients except vinegar for 30 minutes.

Simmer the mix in a heavy-bottomed pan on low-medium heat until the mixture is thickened. This will take around 40 minutes. Add vinegar and stir until well combined.

Divide the chile jam into sterilized jars and store for up to 6 months if not opened, or up to 3 weeks in the fridge once opened.
