Sweet Chile Cucumber Pickles
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.
When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
Ingredients:
2 hot house cucumbers, thinly sliced
2 fresh red Fresno chiles, stemmed and thinly sliced
2 large handfuls fresh mint leaves
2 cups rice vinegar
4 tsp. sugar
salt and freshly ground black pepper
Instructions:
Combine the cucumbers, chiles, and mint in a mixing bowl. Pour in the vinegar and sprinkle with the sugar, salt, and pepper. Toss everything together so the cucumbers are well coated with the vinegar. Refrigerate overnight if possible the cucumbers will soften as they marinate and the flavors will deepen.
