Super Bowl Chili
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
3-4 large onions, chopped
4 Tbsp. olive or corn oil
5 pounds lean ground beef
1 pound high quality pork sausage
5 (16oz.) cans of tomatoes or 5 pounds fresh tomatoes, chopped
1 (12oz.) can tomato sauce
1 cup red wine
1 bulb fresh garlic, peeled and minced
5 fresh jalapeno chiles, seeded and chopped
2 yellow bell peppers, seeded and chopped
2 red bell peppers, seeded and chopped
1/2 cup fresh parsley, chopped
1/2 cup fresh oregano leaves, chopped or 2 Tbsp. dried oregano
1/2 cup fresh basil leaves, chopped
2 Tbsp. ground cumin
2 Tbsp. chili powder
2 Tbsp. salt
1 Tbsp. black pepper
2 Tbsp. cornmeal (or masa harina) mixed until smooth, with 3/4 cup water
Instructions:
Heat the oil in a large Dutch oven. Add the onions and cook over medium heat until translucent, without browning. Transfer to a small bowl with a slotted spoon.
Brown the ground beef and sausage in the Dutch oven over medium-high heat, stirring frequently. Spoon off any excess fat. Add the remaining ingredients and stir well to combine. Simmer uncovered for 1 hour, stirring occasionally.
Add the cornmeal/water mixture and stir to blend well. Simmer for an additional 15 minutes. Season to taste and serve in bowls or over rice.
Tasty toppings for this dish include onions, cheese, sour cream, picante sauce or pico de gallo. Sides of black beans or pinto beans and a salad, and hot crusty bread make an excellent meal.
