Summer Squash Torta
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
1 large zucchini, cut in half across, then sliced lengthwise
1 large yellow squash, cut ino half across, and then sliced lengthwise
1/2 red bell pepper, sliced into thin rings
2 oz., low-fat Cheddar cheese, grated
2 oz. low-fat cottage cheese
2 Tbsp Parmesan cheese
1 tsp cumin
2 cloves garlic, minced
1 serrano pepper, seeded and minced
2 whole wheat flour tortillas
Vegetable cooking spray
Instructions:
Steam first 3 vegetables together until just tender. Blend next 6 ingredients together. Spread cheese mixture on one tortilla. Top with vegetables and cover with other tortilla.
Spray a nonstick skillet with vegetable spray. Slide in the torta, cover and cook over medium heat for a few minutes. Remove torta from the skillet, respray, invert torta, slide it back into the skillet, cover and cook until cheese is melted and tortillas are browned. Cut into quarters and serve with salsa.
