Stovetop Hot Pepper Jelly

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 red pepper, diced
1 green pepper, diced
2 small jalepeno peppers, diced
1 cup apple cider vinegar
2 cups sugar

Instructions:

Makes about 1 1/2 cups jelly, depending on cooking time and how much volume you choose to reduce

Combine all ingredients in a large saucepan and cook mixture over medium-low heat until the mixture has reduced by half. Carefully pour the mixture into a glass jar or suitable container with a lid. Store in the refrigerator.
