Stir-Fried Green Beans with Pork and Chiles

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

1-1/4 pounds green beans
12-16 garlic cloves
6-9 fresh Thai chiles
5 Tbsp. vegetable oil
10 oz lean pork, ground
1/2 tsp paprika
1 tsp. dark brown sugar
3 Tbsp. fish sauce

Instructions:

Wash and trim the green beans. Cut them crosswise into 1/4″ rounds. Peel the garlic and chop fine. Cut the chiles crosswise into very thin slices.

Put the oil in a wok and set it over medium-high heat. When the oil is hot stir in the garlic and green chiles. Stir-fry until the garlic begins to turn brown.

Add the pork and stir fry, breaking up any lumps until the pork has lost that raw look. Add the beans, paprika, sugar, fish sauce and 1-1/4 cups of water. Stir and cook over medium-high heat for 8-10 minutes or until the beans are tender and most of water has been absorbed. Serve over hot rice.
