Steamed Broccoli with Chile and Sesame Oil
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.
When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
Ingredients:
2 head of broccoli, trimmed to florets
2 red chiles
4 tsp sesame oil
3 tbsp coriander, chopped
sea salt
Instructions:
In a medium sized saucepan add 17 oz/500ml of water and place over a medium heat. Once the water starts to boil add a little salt and the broccoli florets.
Turn down the heat and simmer for 7-8 minutes. Drain the water and transfer the florets to a wok. Add the sesame oil, salt and chopped chiles. Gently fry for 2 minutes tossing at all times.
Transfer to a bowl and sprinkle over some chopped coriander.
