Spinach Chalupas Casserole (Chalupas de Espinacas)

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

2 pounds fresh spinach
1/2 cup minced onion
2 cloves garlic, minced
1 tsp. Bailry Farms Red Habanero Hot Sauce, or to taste
salt to taste
1/2 cup soda cracker crumbs
1 egg, beaten
18 flour tortillas
1-1/2 cups cream
1-1/2 cups shredded Cheddar cheese

Combine the spinach with a small amount of water in a saucepan and cook just until tender. Drain well and chop the spinach. Combine with the onion, garlic, hot sauce and salt in bowl. Mix well and stir in the cracker crumbs and egg. Spoon the mixture onto tortillas and roll to enclose the filling. Place the rolled tortillas in a baking dish and pour cream over them. Refrigerate for 4-5 hours.

Remove from the refrigerator and sprinkle with cheese. Bake at 300F for 45 minutes or until golden brown.
