Spicy White Bean Salsa
Cayenne is a red or green hot chili pepper used to flavor chile food dishes and is also used for medicinal purposes. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annuum related to bell peppers, jalapeƱos, and others.
Ingredients:
2 jalapeno peppers, diced
2 cayenne peppers, diced
1 (15-oz) can Cannellini beans (or any preferred white beans)
10 oz tomatoes, diced
1 onion, diced
1 tsp sugar
2 tsp minced garlic
4 Tbsp olive oil
1 tsp lime juice
1 Tbsp white vinegar
Salt and pepper to taste (heavy on the pepper)
Fresh parsley, chopped to garnish
Instructions:
Rinse and drain Cannellini beans and add to large bowl. Add tomatoes, onion, jalapeno peppers, cayenne peppers, sugar, garlic, salt and generous amounts of pepper and mix well.
In a separate bowl mix olive oil, lemon juice and vinegar and mix well.
Pour over spicy bean salad and toss to combine. Chill before serving.
