Spicy Thai Green Papaya Salad

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

INGREDIENTS
Raw papaya – 1 and ½ cup ( Julienne )
Carrot – ½ cup ( Julienne )
Bean sprouts – ½ cup
French beans – 5-6 ( Cut into small pieces )
Roasted peanuts – ¼ cup
Coriander – 2 tbsp ( Chopped )

For the dressing
Olive oil – 2 tbsp
Lemon juice – 2 tbsp
Soy sauce – 2 tsp
Fish sauce – 1 tsp
Honey – 2 tsp
Garlic – ½ tsp ( grated )
Red chile – 1 ( Chopped )
Salt to taste

INSTRUCTIONS
Mix raw papaya, carrot, bean sprouts and french beans in a bowl.
In another bowl, mix the ingredients for the dressing.
Pour the dressing over the salad and mix well.
Transfer the salad in a serving bowl.
Sprinkle the roasted peanuts and coriander on top.
Serve immediately.
