Spicy Texas Barbeque Sauce

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 cup catsup
1/2 cup brown sugar, firmly packed
1/4 cup lime juice
2 Tbsp ground red chiles, or to taste
1 Tbsp vegetable oil
1 Tbsp Worcestershire sauce
1 1/2 cups onion, chopped (about 3 medium)
4 jalapeno chiles, seeded and finely chopped
2 cloves garlic, finely chopped
12 oz. tomato paste (1 can)
12 oz beer

Instructions:

Heat all ingredients to boiling in a 2-qt saucepan. Reduce heat to low. Cover and simmer 1 hour, stirring occasionally. Makes about 5 cups of sauce.
