Spicy Stir Fried Bamboo Shoots

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients:

3 cloves garlic, chopped finely
3-5 red Thai chili peppers
2 green onions, cut into 1″ lengths
3 kaffir lime leaves, deveined and sliced thinly
1/4 cup ground pork
2 cups bamboo shoots, cut into 1″ strips
1 Tablespoon oyster sauce
2 Tablespoons thin soy sauce

Instructions:

If you are using fresh bamboo shoots, boil them in water for about an hour to remove their natural bitterness. Then peel the outer layers off and slice the meat into 1″ long pieces. If you are using canned bamboo, just rinse the slices in water before using. Heat a little oil in a wok over medium high heat. Add the garlic and chilis and cook until the garlic is golden brown.

Add the ground pork and fish sauce and cook until the pork is done. Then add the bamboo shoots and oyster sauce and stirfry a bit longer. Add the kaffir lime leaves and green onions. Stirfry just until these are incorporated and the green onions are cooked slightly. Remove from the heat and serve with jasmine rice.
