Spicy Southwestern Shrimp Cocktail

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients:

1-2 red Fresno Peppers, minced
1-1/2 cups ketchup
1 medium onion, minced
1 ripe avocado, chopped
1/2 cup cilantro, minced
3/4 pound large, fresh shrimp
1/2 tsp salt
juice of 2 limes, preferably key limes

Instructions:
Boil the shrimp for 5 minutes in a medium sized pot. Remove the shrimp and save the water used to cook the shrimp. In a large bowl combine 1-1/2 cups ketchup, 1-1/2 cups shrimp water, avocado, onion, cilantro, lime juice and salt. Stir together well.

Peel the shrimp and add to the bowl. Place in the refrigerator for 1 hour before serving.
