Spicy Shrimp Tacos
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 large jalapeno pepper, chopped
1 tsp chili powder (we used ground piquin)
1 lb fresh shrimp, shells removed and deveined
2 limes, sliced
3 tsp sour cream
2 Tbsp mayo
2 cups shredded cabbage
6 corn tortillas
1 Tbsp butter
Garlic to taste
1/2 cup shredded Colby Jack cheese
Instructions:
For the Sauce: In a small bowl, mix chili powder, mayo, and sour cream. Set aside.
For the tacos: Brush shrimp with butter and garlic. Grill or pan fry over medium heat until shrimp is tender and pink throughout.
Warm tortillas in a microwave or over the stove 2-3 minutes. Serve shrimp over tortillas with a teaspoon of sauce. Garnish with jalapeno peppers, cabbage, cheese and fresh lime juice.
