Spicy Pizza Sauce

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients:

2 large onions
2 cloves of garlic
1 Tbsp. olive oil
2 pounds ripe Roma tomatoes
2-3 red Fresno chiles

Instructions:

Peel and finely chop the onions, chiles and garlic. Saute in the olive oil over low heat for about 10 minutes, or until they are transparent. Roughly chop the tomatoes and add to the onions. Cook the mixture over a medium heat for 35-40 minutes, or until it begins to thicken. Cool. This sauce will work with a variety of toppings.

Variation: Add 1/2 cup of red wine to the onions after they have cooked. This gives this sauce a very unique flavor.
