Spicy Okra and Turnip Greens
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 pound turnip or collard greens
12 okra
1 medium onion, chopped
1oz. jar pine nuts (1/4 cup)
2 Tbsp. vegetable oil
3 red jalapeno chiles, stemmed, seeded and finely chopped
1/4 cup water
1/4 tsp. salt
Instructions:
Remove the stems from the turnip greens and cut the leaves into 1/4″ slices. Remove the ends from the okra and cut the okra crosswise into halves. Cook the onion and pine nuts in some oil in a Dutch oven over medium heat, stirring occasionally until the onion is tender, about 5 minutes.
Stir in the turnip greens, okra and remaining ingredients. Heat to boiling and reduce the heat. Cover and simmer until the turnip greens are tender — about 18-20 minutes.
