Spicy Grilled Short Ribs
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1-1/2 pounds well-trimmed beef short ribs, cut crosswise 3/8
1/2 cup barbecue sauce
1/4 cup fresh lemon juice
3 jalapeno peppers, minced
3 Tbsp. green onions, minced
salt and pepper, to taste
Instructions:
Combine the barbecue sauce, lemon juice, jalapeno peppers and green onion. Reserve 1/4 cup of the marinade for later usage.
Place the short ribs in a large plastic bag and add the marinade, turning to coat. Close the bag securely and marinate in the refrigerator for 6-8 hours, turning occasionally.
Remove the ribs from the marinade and discard the marinade. Place the ribs on a grid over medium coals and grill for 10-12 minutes, turning once, brushing with the marinade. Season with salt and pepper and serve immediately.
