Spicy Confetti Chicken Breasts
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
4 chicken breast halves, skinless-boneless
salt and freshly ground black pepper
1/4 cup fresh orange juice
2 Tbsp. chopped parsley
2 Tbsp. olive oil
2-6 small fresh hot Thai chiles, seeded and minced
Instructions:
Rinse the chicken with cold water and pat it dry. Place the chicken in a glass dish or plastic bag. Season it with salt and pepper. Mix the remaining ingredients together and pour over the chicken. Marinate for at least 2 hours, or overnight in the refrigerator.
Grill the chicken over hot coals for 6-8 minutes. Turn the chicken and baste it with the marinade. Continue turning and basting the chicken until it is just cooked through, about 16-20 minutes total.
