Spicy Cheesy Guacamole

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

3 ripe Hass avocados
1 jalapeño pepper, finely chopped
1 lime, juiced
1/3 cup chopped fresh cilantro
1/3 cup queso fresco, crumbled
Kosher salt and freshly cracked black pepper to taste

Instructions:

Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Remove the avocado from the skin, and place the avocado flesh on a cutting board. Cut the avocado in [1/2]-inch cubes and transfer the avocado to a medium sized bowl. Add the jalapeño pepper, fresh lime juice, cilantro and crumbled queso fresco to the bowl. Mash everything together with a fork until half chunky and half creamy. Season with salt and pepper to taste and serve immediately.
