Spicy Cheese Grits

Ingredients:

2 Tbsp. unsalted butter
1 small onion, finely diced
4 cups whole milk
1 cup white or yellow grits
1 Tbsp. Bailey farms Jalapeno Pepper Sauce
1 tsp. salt
2 cups extra-sharp cheddar cheese, grated

Instructions:

Melt the butter in a large saucepan over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes. Add the milk and the salt and bring to a boil. Stir the milk mixture frequently to prevent scorching. Whisk in the grits and reduce the heat to low. Cook, stirring frequently to prevent scorching. Cook, stirring frequently until the grits are thick and creamy, about 10 minutes. Remove the pan from the heat and stir in the grated cheddar cheese and the hot pepper sauce. Adjust seasoning with salt to taste.
