Spicy Black Bean and Avocado Hummus
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1-15 oz can black beans, drained and rinsed
1 medium avocado, pitted and peeled
1 jalapeno, stem and seeds removed
1 clove garlic
2 tbs freshly squeezed lime juice
2 tbs water
2 tbs tahini
1 tsp cumin
½ tsp salt
¼ tsp freshly ground black pepper
Instructions:
Serves: 6
Combine the ingredients in the bowl of a food processor. Process until smooth and creamy. Serve with chips or fresh vegetables. Can be stored, refrigerated in an airtight container for up to 3 days.
