Spicy Beef with Thai Basil
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Ingredients:
1/4 cup light soy sauce
1 1/2 tsp fish sauce
1 Tbsp brown sugar
1 Tbsp mirin
1 Tbsp cornstarch
1 lb beef (flank, flap, or sirloin), cut into strips against the grain)
4-6 garlic cloves, minced
3 shallots, sliced
1-2 Thai chiles, chopped
1 1/2 cup of bell peppers, cut into strips
1 cup Thai basil leaves
Pepper
Instructions:
In a small bowl, combine soy sauce, fish sauce, brown sugar, mirin, and cornstarch and mix together.
In a sauté pan or wok, heat with oil and stir fry the beef for about 3 minutes.
Add garlic, shallots, chilies, and bell peppers and cook until meat and peppers are tender.
Pour the soy sauce mixture into the pan and coat the beef and vegetables. The sauce will start to thicken.
Turn off the heat and toss in the Thai basil leaves and finish off with cracked pepper. Serve over rice.
