Spicy Baked Shrimp with Chili Peppers and Feta Cheese

Cayenne is a red or green hot chili pepper used to flavor chile food dishes and is also used for medicinal purposes. Named for the city of Cayenne in French Guiana, it is a cultivar of Capsicum annuum related to bell peppers, jalapeƱos, and others.

Ingredients:

2 cayenne peppers, diced
2 serrano peppers, diced
2 jalapeno peppers, diced
1 lb raw shrimp, shelled
1 oz fresh basil leaves, chopped
2 oz fresh parsley, chopped
6-8 Roma tomatoes, chopped
1 medium sized white onion, diced
4 Tbsp olive oil
2 Tbsp chili pepper oil
1/2-1 cup crumbled feta cheese

Instructions:

Heat a deep pan to medium heat. Saute onion in 1 tablespoon of olive oil about 5 minutes, or until onion is translucent.

Add tomato, peppers and herbs and remaining 3 tablespoons olive oil. Reduce heat to low and simmer about 15-20 minutes to reduce the overall liquid. Add shrimp to sauce and simmer 2-3 minutes.

Preheat oven to 350 degrees. Transfer shrimp and sauce mixture to a baking dish. Sprinkle with feta cheese. Bake 30 minutes. Serve!
